CARROT CAKE GOODIE BALLS
MAKES 16 BALLS | GLUTEN FREE | DAIRY FREE | VEGAN
Carrot Cake would have to be one of my all time favourite cakes. This tasty little recipe provides you with all the key flavours you would expect to find in a generous slab of cake, but in a healthy, lunch-box friendly snack. If you’re a meal-prep fan, make in advance and store in the fridge for the week ahead.
INGREDIENTS
2 carrots, grated
1 cup sulphite-free sultanas or dates
1/2 cup virgin coconut oil
1 cup organic desiccated coconut, extra for rolling
1 ½ cups raw walnuts, chopped
1 tsp ground cinnamon
2 tbsp pure maple syrup
1 tsp pure vanilla bean extract
Pinch of natural salt
METHOD
Squeeze grated carrot through a muslin cloth or fine sieve to remove excess moisture.
Place all ingredients into a food processor. Pulse until well combined. Place mixture in the refrigerator to firm up slightly before rolling.
Roll mixture into tablespoon-sized balls. Coat evenly with additional coconut.
