FRUIT + NUT TOASTED MUESLI
SERVES 6 | DAIRY FREE
INGREDIENTS
1 cup rolled oats
1/3 cup natural almonds
1/4 cup buckinis
1/4 cup pepitas
1/4 cup hemp seeds
1/4 cup sunflower seeds
1/4 cup organic sultanas
1/4 cup goji berries
2 tbsp chia seeds
1/2 tsp ground cinnamon
Pinch Salt
2 tbsp virgin coconut oil
1/3 cup raw honey
1 tbsp vanilla extract or vanilla bean paste
2 tbsp water
METHOD
Preheat oven to 140oC.
Line a baking tray with baking paper.
Mix dry ingredients together in a bowl. Mix wet ingredients together in a jug. Pour over dry ingredients and combine well.
Spread muesli mixture onto prepared tray. Bake in the oven for 15-20 minutes. Remove from oven and using a spoon, gently turn muesli over. Return to the oven for a further 10-15 minutes.
Allow to cool completely on tray before transferring to an airtight container.
Serve with unsweetened coconut yoghurt or natural yoghurt and fresh, seasonal fruit.
