GREEN VEGGIE FRITTERS
SERVES 4 | DAIRY FREE OPTION | 10 MINS PREP TIME | 20 MINS COOK TIME
INGREDIENTS
2 free-range eggs
1/3 cup full cream milk or preferred milk
1/2 cup wholemeal spelt flour
1/2 tsp baking powder
1 clove garlic
1/2 cup grated parmesan cheese, optional
1 medium zucchini, grated
2 cups English spinach, finely chopped
1 brown onion, finely sliced
1/2 cup peas, or green beans, roughly chopped
Salt and pepper
1/4 cup extra virgin olive oil
2 ripe avocados, diced
1 lemon
200g smoked salmon, optional
Fresh herbs to serve, optional
METHOD
In a large bowl, whisk together eggs, milk and flour to create a smooth batter.
Add garlic, parmesan cheese and vegetables to the bowl. Mix together well and season with salt and pepper. Allow mixture to stand for 5 minutes.
Heat oil in a large frypan over medium heat. Use a measuring cup to ladle fritter batter into hot oil. Fry fritters for 3-4 minutes each side. Remove fritters from pan and drain on paper towel.
Place avocado and lemon juice into a bowl and use a fork to lightly mash. Season to taste with salt and pepper.
Serve warm fritters with smoked salmon and smashed avocado. Garnish with fresh herbs.
