MUM’S CHOCOLATE SLICE
MAKES 12 PIECES
Hands down, the best thing that ever entered my lunchbox as a kid. This recipe is so nostalgic for me. I love the sultanas and the super simple icing. I know it’s not the healthiest snack, but it’s got to be better for you than store-bought biscuits (it definitely tastes a million times better!)
INGREDIENTS
1 1/4 cup self-raising flour
1/4 cup cocoa powder
3/4 cup desiccated coconut
1/2 cup caster sugar
125g butter, melted
1 free-range egg
1 cup sultanas
Chocolate Icing
1 cup icing sugar
1 tbsp cocoa powder
1 tsp vanilla extract
1 tbsp butter
1 tbsp milk
METHOD
Preheat oven to 180*C. Grease and line a slice-tin with baking paper.
Mix dry ingredients together in a medium-sized bowl. Add butter and egg and mix well. Fold through sultanas. Evenly press slice into prepared tin. Place slice in the oven to bake for 10-12 minutes.
Meanwhile, sift icing sugar and cocoa into a small bowl. Add vanilla, butter and milk and mix together well.
Remove slice from oven. Pour icing over the top and set aside to cool. Cut into 12 even slices. Enjoy!
