SUNFLOWER SEED GRANOLA BARS

MAKES 12 BARS | GLUTEN FREE | DAIRY FREE | NUT FREE

Sunflower seeds - rich in vitamin E, copper, manganese and selenium, these little guys are a powerhouse of nutrition making them beneficial for skin health, antioxidant support and inflammation. I created this one for Clarins Australia as a part of their #takecare initiative. With everything that’s happening around us, it’s so important to make your health and wellbeing a priority. Gluten free, dairy free, nut free, 10 minutes to make and only contain 7 ingredients! Enjoy!

INGREDIENTS

  • 1 cup sunflower seeds

  • 1 cup puffed brown rice

  • 1 cup buckinis (activated buckwheat)

  • 1/2 cup raw honey

  • 1/4 cup virgin coconut oil

  • 1 tsp pure vanilla extract

  • Pinch natural salt flakes

METHOD

In a mixing bowl. Add sunflower seeds, puffed brown rice and buckinis. Mix well.

Place honey, coconut oil and vanilla in a small saucepan. Place over medium heat and bring to the boil. Simmer for 2-3 minutes.

Pour over dry ingredients and stir until mixed together well.

Press into a lined slice tin and refrigerate until firm. Cut into 12 bars.

Store in an airtight container in the refrigerator for up to two weeks.
