THE BEST DAIRY-FREE MASH

INGREDIENTS
500g potatoes, peeled and chopped
500ml almond milk or preferred milk
2 bay leaves
2-3 cloves garlic
3-4 tbsp extra virgin olive oil
Salt and pepper
METHOD
Place potatoes in a large saucepan. Cover with cold water and place over high heat. Bring to the boil and allow potatoes to cook until they’re very soft.
Meanwhile, place almond milk, bay leaves and garlic in a small saucepan. Season well with salt and pepper. Bring to a gentle simmer and remove from heat.
Drain potatoes and mash until broken down. Add extra virgin olive oil and mix well. Remove bay leaves from hot milk and gradually pour milk into potatoes. and Continue to mix until smooth and creamy. Season to taste with salt and pepper. Serve hot as the perfect side to something delicious and saucy!
